Travel Journal: Amsterdam

In the Holiday issue of Delighted, Michael and Christina Townsend shared their travel journal and amazing photos from their visits to Amsterdam, Paris and Budapest. Today I'm posting their Amsterdam trip and in the coming weeks will share the Paris and Budapest photos and all of the great details and tips. If you've ever been to any these places, Michael's pictures are sure to bring it back to life for you. And if you've never been, you'll no doubt want to!

From Michael and Christina: Amsterdam was our favorite city of the six that we visited. Even in the rain, the city is beautiful: A medieval town built in the 1200’s and full of charm. It is dense, yet feels small and manageable. Very few cars clog the streets as most everyone rides bikes; iconic dutch classics only distinguished by their variety of bucket and basket attachments. Our brief dips into the city center confirmed that your time is best spent away from the red light district and civic center and better spent in the canal belt, weaving through places like the 9 Straatjes (streets). We had several memorable meals while visiting, and also don’t forget to try Poffertes since the Dutch are known for their fluffy pancakes.

Moeders -  An eclectic restaurant with pictures of mothers covering the walls. They are still accepting photos, so bring one along if you’d like. Deeply traditional, deeply delicious meat and potatoes dishes (and Christina doesn’t really like red meat)

De Kas - Nestled on the outskirts of the centraal in a park, DeKas grows all of it’s produce on site in an array of greenhouses. Meat is sourced locally and a serves it all up in an exquisite three course meal. Be sure to pack a nicer clothes if you’re planning to dine here and be sure to book a table two to three weeks in advance.

Sweet and Whimsical Floral DIY

I asked one of my favorite floral designers to share a simple DIY arrangement in the latest issue of Delighted. Kiana Underwood of Tulipina gave just that: a combination of sweet florals arranged in the most unexpected containers—measuring cups!

Here are Kiana's tips on how you can create the same: 

A little mistletoe and some soft colored flowers make for a perfectly beautiful, unique and wintery arrangement. The flowers used here are carnations and ranunculus.

If you have any fun measuring cups (or even regular ones) at home, there is nothing holding you back from doing a little flower arrangement in them! 

Begin with the mistletoe. Just a couple of branches will do. Then add your flowers in whatever way your heart desires. This is a pretty “freestyle” arrangement. No particular way about it. I just put flowers wherever I thought they were needed.

Swedish Pancakes

This Swedish pancake recipe is almost exactly like the one I grew up enjoying. My mom's side of the family has a Scandinavian heritage and she would serve these to us with syrup or homemade jam just as her mom did. As kids we called them skinny pancakes—because they are! I hope you make them this weekend...I'm sure you'll love them.

This is a traditional recipe handed down to me by my boyfriend’s mom. The trick with these is to have a good flat skillet and keep a solid eye on the pancakes as they cook. Traditionally they’re served where the cakes are rolled.

INGREDIENTS

3 eggs
2 1/2 cups lowfat milk
1 1/2 cups all-purpose flower
1/2 teaspoon salt
3 tablespoons butter, melted
vegetable oil

DIRECTIONS

1. In a large mixing bowl, beat the eggs with half of the milk

2. Beat in flour and salt until smooth

3. Stir in melted butter and remaining milk

4. Heat a griddle or large skillet with a small amount of vegetable oil 

5. For each pancake, pour about 1/4 cup of the batter into the griddle and cook over medium heat for two minutes

6. With a spatula, turn the pancakes and cook until brown, one minute

7. Keep warm while making remaining pancakes and serve immediately

The First Meeting

A mutual friend invited us both to a Matt & Kim concert at the Mezzanine in 2010 and we hung around a crepe cart and chatted after the show. We kept running into each other all summer long and started dating shortly before Sin returned home to Malaysia for 10 months!

The First Date

Joe had been bragging about how much better fresh pasta is than the dry kind and invited Sin over to make some for dinner with him. He was prepping the dough before she arrived and had a mishap with the food processor. When Sin came in, the kitchen was a bit of a bloody mess. Not the most elegant of first dates, but she gave him a few more chances to win her over.

Engagement Story

Joe had been ring shopping for a little while and had just received the finished ring - unbeknownst to Sin. We went to see "Like Crazy", a movie about an American and an Englishwoman who fall for each other and then get separated because of visa issues. (Ironic, huh?) We went back to Sin's apartment and were talking about the movie, including things like cultural disconnects in relationships and Joe just felt like the time was right to ask. There was a little bit of a shocked silence during which he got really nervous, but Sin said yes!

When our photographer Caroline of Coeur de La Photography suggested the Flora Grubb Gardens in the Bayview as a shooting location, we knew it'd be perfect. We keep a pretty large patio garden, including three different succulent arrangements and we love the variety and beauty of the dry-weather plants.

Valentine's Dinner Party

A few years ago my parents invited some of their "couple friends" over for dinner on Valentine's weekend and they all shared their "how they met" stories with each other. What a sweet idea, right? So we put together our own version of this dinner, complete with printables to encourage you to do the same with your friends! It's not only a great way to learn more about your friends, but will also remind you why you love the one you're with. To use the heart printable, print pages, cut out hearts and place one at each place setting or put the hearts in a bowl and choose the questions randomly. Have fun!
